What is beta carotene?

Beta carotene is the strongly coloured red-orange pigment that gives many fruits and vegetables their bright colour. First crystallized from the roots of carrots in 1831 by German pharmacist Heinrich Wilhelm Ferdinand Wackenroder, the name comes from the Greek, beta meaning ‘b’ and the Latin carota meaning ‘carrot’ and it is part of a large group of anti-oxidants called carotenoids - a group which includes lycopene, found in tomatoes and about 600 other carotenes.
